I had buttermilk that I picked up at Fresh & Easy on clearance that needed to be used, and soft white wheat flour in the freezer. I picked up some wheat germ yesterday at Sprouts after seeing a few recipes for it. And Johnny called saying he was going to be about an hour late getting home. Thus, I made this recipe up on the fly, and dinner was born. I didn't measure anything when I was making it, so feel free to do the same.
Whole Wheat Buttermilk Waffles (makes about 8 waffles)
3 1/2 C. Soft Whole Wheat Flour (aka Whole Wheat Pastry Flour)
1/4 C. Wheat Germ
1/4 C. Ground Flax Seed
2 tsp. Cinnamon
1 1/2 tsp. Ginger
pinch of Sea Salt
1 T. Baking Powder
Whisk together dry ingredients in a large mixing bowl. In a separate bowl, whisk together:
2 C. Buttermilk
2 Eggs
1/4 C. Canola Oil
2 tsp. Vanilla
1 1/2 T. Honey
1 T. Maple Syrup (the real stuff)
Pour the wet ingredients into the dry ingredients, and whisk together. Add water a little at a time until batter reaches the right consistency for pouring. Cook in your waffle iron.
Serve with real maple syrup for a real treat!
